How to pick fresh Oregano
Vivid green with a sharp herbal punch you smell before you touch it
How to pick
Look for sprigs with small oval bright green leaves still firmly attached to slim woody stems. Fresh oregano hits you with a sharp, slightly spicy herbal aroma — true Greek oregano has an exceptionally potent, pungent scent that reaches you before you even bring the sprig close. Leaves should be flexible, not brittle.
Red flags
- Yellowing leaves — past prime
- Past flowering / gone to seed — leaves lose essential oil and may taste flat or harsh
- Faint aroma — true oregano should be unmistakable
- Brown or wet patches on leaves
How to store
Wrap unwashed sprigs in a dry paper towel, seal in a zip bag, refrigerate. Lasts 1–2 weeks. Oregano dries excellently — flavor intensifies on drying, and most pizzeria-style oregano is dried. Hang sprigs in a dark, dry, ventilated spot for 1–2 weeks — ready when stems snap and leaves crumble — then strip leaves into a jar.
