How to pick a ripe Cantaloupe
Pick the melon whose netting has gone tan-gold underneath — a green cast means it was cut early and won't sweeten off the vine
How to pick
Read the background color between the raised netting: warm tan-gold means it ripened and slipped from the vine on its own; green or gray-green means it was cut early — and because cantaloupe's sugar is fixed at harvest, an under-ripe one never sweetens at home. Look for coarse, evenly raised netting over the whole melon and a smooth, clean stem-end scar with no bit of stem left behind. At the blossom end (opposite the stem) a sweet musky smell and the slightest give confirm ripeness; lift two of the same size and take the heavier one.
Red flags
- Green or gray-green background still showing between the netting — picked immature; cantaloupe does not sweeten after harvest
- A stub of stem left at the scar, or a rough, torn stem end — pulled off before it was ripe (before 'full slip')
- Flat, sparse, or uneven netting — a sign of an immature or stressed melon
- A soft, sunken, or darkening blossom end past the slightest give — over-ripe
When will it be ripe?
- Gray-green · never sweetens Green or gray-green background still showing between the raised netting, often with a stub of stem left at the scar.
- Pale tan · softens only Background just turning tan, netting coarse and evenly raised, blossom end still hard.
- Tan-gold · eat now Warm tan-gold between the netting, a smooth clean stem scar, sweet musky smell and the slightest give at the blossom end.
- Soft blossom · use fast Blossom end soft, sunken or darkening past the slightest give; smell turning sharp.
How to store
Keep a whole melon in the fridge at about 36–41 °F (2–5 °C), where a ripe one holds roughly 5–7 days. Don't let it get colder than ~36 °F (2 °C) — cantaloupe is chilling-sensitive and will pit and lose flavor below that. A firm melon can sit on the counter a day or two to soften and grow more fragrant, but it will not get any sweeter. Once cut, wrap and refrigerate and use within about 3 days. Scrub and rinse the whole rind before cutting — the netting can carry surface microbes that the knife would drag into the flesh.
