How to pick a ripe Banana
Full yellow stem to tip — sweet scent at the crown
How to pick
Look for Stage 5–6: fully yellow from stem to tip, with at most a faint green blush at the very tips. Skin should be smooth and spotless — no brown patches. Check the crown (the thick curved stub at the top where the bunch connects): it should be cream-tan and firm, not black or mold-spotted. Lift the hand — a well-developed banana feels solid for its size. Smell the crown end: a sweet, fruity fragrance means the sugars are fully developed. Finally, cradle the bunch gently in your whole palm — at peak ripeness the fingers yield very slightly, not rock-hard and not mushy.
Red flags
- Large coalescing brown patches covering more than a few spots per finger — past eating peak
- Crown turned fully black or spotted with gray-blue mold — crown rot disorder
- Still uniformly green throughout — not yet ripe enough to taste sweet
When will it be ripe?
- All green · not yet Uniformly green from stem to tip, firm with no give when the hand is cradled in a whole palm.
- Green tips · almost Yellow over most of the finger with a faint green blush left at the very tips; skin smooth and spotless.
- Fully yellow · eat now Fully yellow stem to tip, crown cream-tan and firm, sweet fruity smell at the crown end, the finger yielding very slightly.
- Brown spots · still sweet Brown patches spreading and joining up across the finger; flesh soft, smell strongly sweet.
How to store
Store green or just-breaking bananas at room temperature, 59–68 °F (15–20 °C). Do not refrigerate unripe bananas — temperatures below 56 °F (13 °C) cause chilling injury: the peel turns gray-brown and the banana never fully ripens. Once at peak ripeness (Stage 6), consume within 2–5 days. Refrigerating a ripe banana will blacken the peel within 1–2 days, but the flesh inside stays edible 2–3 more days; the black peel is cold-induced PPO activity, not decay. Ethylene-producing fruits — bananas, apples, and avocados — cause each other to ripen faster when stored together; keep them apart unless you want to speed up ripening.
