How to pick

Look for a cucumber that is uniformly dark green from tip to stem with no yellow patches, pale streaks, or wrinkled skin. The body should feel rigid when cradled in your palm — a fresh cucumber holds its shape without any flex or give. It should feel solid and heavy for its size; any softness or visible wrinkling means water loss has already started. For long slicing types, it should be relatively straight and even — pickling and snacking cucumbers are naturally shorter and may curve, which is variety character, not a defect. Avoid any with a clubbed or bulging shape, which signals uneven development from poor pollination or field stress — the bulged section is typically seedier, though the rest of the cucumber is often fine. The stem end, if present, should be pale green and moist-looking, not dried, brown, or shriveled.

How to store

Cucumbers prefer 50–55 °F (10–13 °C) — the entire home fridge (34–39 °F [1–4 °C]) is colder than ideal and can cause pitting and water-soaked spots over time. Store at room temperature for up to 3 days if possible; if refrigerating, use within 5 days. Keep away from ethylene producers (apples, bananas, tomatoes, melons) — cucumbers yellow and decay rapidly in their presence. Once cut, wrap tightly in plastic or store in an airtight container and refrigerate; use within 2 days.
