How to pick fresh Curry Leaves
Strong citrusy scent, leaves gripping the stem — that's a fresh sprig
How to pick
Look for sprigs with glossy, deep green pinnate leaves still attached firmly to the central rachis. A fresh sprig releases a strong distinctive scent — citrusy and slightly nutty — without needing to be bruised. The leaflets should be flexible and intact, not falling off the stem when handled. Smaller, younger leaves at the tip are more aromatic than the older, larger leaves toward the base.
Red flags
- Leaves dropping off the stem at the slightest touch
- Black or brown spots — fungal damage or chilling injury
- Dull, matte leaves with no shine
- Leaflets turning dark brown or black at the edges or tips
How to store
Wrap unwashed sprigs loosely in a paper towel, seal in a zip bag, refrigerate. Lasts 1–2 weeks. For long storage, freeze whole sprigs in a sealed bag — they crumble straight into hot oil. Drying loses most of the aroma; avoid unless space is the constraint.
