How to pick

Choose small-to-medium parsnips — shoulder about 1.5 to 2 inches in diameter (4–5 cm). The tip is the tell: a fresh parsnip has a firm, smooth tip; a past-peak one shows faint skin wrinkling at the narrow end. Look for uniform cream-white skin from shoulder to tip with no wrinkles anywhere. Heft matters — a dense, heavy root signals good water content. The crown should be cleanly trimmed and cream-colored; any orange, dark brown, or black patches at the shoulder junction are canker.

How to store

Refrigerator crisper drawer in a perforated plastic bag or paper bag. 32–40 °F (0–4 °C), 90–95% relative humidity. Lasts 3–4 weeks in a typical home refrigerator crisper. Keep away from apples and pears — the ethylene they release triggers bitterness in parsnips, likely through furanocoumarin (xanthotoxin) formation. Do not store at room temperature for more than a day or two — parsnips turn rubbery without refrigeration.
