How to pick a ripe Lime
Glossy green and heavy for its size — that's the juicy one
How to pick
Look at the skin first: a fresh lime has a waxy, reflective sheen — the surface catches light and looks slightly glossy. A lime that looks flat and matte has already begun to age, even if it is still green. Then lift it: a juicy lime is noticeably heavy for its size because it is dense with liquid. Limes lose moisture quickly in storage, so a light or slightly hollow-feeling fruit has less juice. The skin should be uniformly lime-green with no patches of yellowing, especially near the stem end where chlorophyll breakdown begins first.
Red flags
- Dull, matte surface with no waxy sheen — gloss loss is the earliest sign of aging
- Yellow patches on the skin, especially at the stem end — chlorophyll breakdown, past prime
- Feels light or slightly hollow for its size — juice has dried out in storage
- Soft, sunken, or mushy spots anywhere on the surface — internal decay
- Wrinkled or pitted skin — significant moisture loss, juice content is low
How to store
Refrigerate in the crisper drawer (the warmest part of the fridge) in a sealed bag at 45–50 °F (7–10 °C) for up to 3 weeks. Limes are chilling-sensitive — the main compartment of a standard home fridge (35–40 °F [2–4 °C]) is too cold and can cause pitting and surface browning. At room temperature, limes last about 1 week. Store whole and unwashed; surface moisture accelerates mold. Cut limes should be wrapped tightly and used within 2–3 days. Keep away from ethylene-producing fruits (apples, bananas, avocados) — ethylene accelerates yellowing. Juice can be frozen in ice-cube trays for up to 4 months.
