How to pick a good Zucchini
Shorter than your hand with glossy skin — seeds are still soft and flesh stays sweet
How to pick
Reach for zucchini in the 6–8 inch (15–20 cm) range — at this size the seeds are still immature and soft, the skin is thin enough to eat, and the flesh is mild and sweet. Anything noticeably larger tends to be watery, seedy, and slightly bitter. The skin should have a healthy gloss — look for light catching the surface evenly from end to end. A dull, matte finish means moisture has already started to leave the skin. Cup the zucchini gently in your whole hand: it should feel firm and solid throughout, with no soft areas near the blossom end, which is the first part to soften.
Red flags
- Length over 10 inches (25 cm) — likely seedy, watery, and bitter
- Wrinkled or shriveled skin — advanced moisture loss, flesh will be pithy
- Yellow patches on the skin — sign of overmaturity; flesh will be seedy and watery
- Mushy or sunken patches anywhere on the skin
- Shriveled or dried-out stem end — indicates the zucchini was harvested long ago
How to store
Store unwashed in the crisper drawer in a loose bag. Zucchini is cold-sensitive below 41 °F (5 °C) — keep it in the warmest part of the refrigerator. Use within 4–5 days. Once cut, wrap tightly and use within 2 days.
